A great little vitamin C rich treat to have on hand as the colder months are upon us.
Ingredients
- 1 cup (250mls) freshly squeezed lemon juice (I used 5 Meyer lemons)
- 2 cups filtered water
- 2 teaspoons freshly grated ginger
- 4 grass fed gelatin sheets
- 4 tablespoons raw honey
Instructions
Place the lemon juice and one cup of water in a saucepan and bring to a gentle boil. Remove from heat, add the grated ginger and leave to infuse for 5 minutes.
While the ginger is infusing, pour the other cup of water into a bowl with the gelatine sheets and leave to bloom.
When the ginger has infused, strain into a jug, removing ginger pulp and sediment.
Transfer the bloomed gelatin mixture into the ginger-lemon water and whisk until completely dissolved.
Stir in the honey. Taste for sweetness and adjust to taste.
Pour into your moulds and place in the fridge until set.
I used this silicon honey comb mould to make these gummies.
